In this study, 50 civil cheese samples obtained from Erzurum province have been analysed microbiologically. The mean values of colony counts were determined as follows for different microorganisms: for general viable microorganisms 3.36x10s cfu/g, for psychrophilic microorganisms 3.90x105 cfu/g, for coliform group 3.05xl04 cfu/g, for E.coli 3.07xl0: cfu/g, for S.aureus 1.16x 102 cfu/g, for Lactobacillus 2.06xl04 cfu/g, for yeast 1.32x10s cfu/g, and mould 5.11xl04 cfu/g. According to the microbiological analysis results, it was concluded that civil cheese may cause a potential risk for public health and thereby hygienic precautions should be taken by determining critical control points from phases of production, storage and sale.
